Okinawans primary diet was the sweet potato. I use a CGM and have noticed I get incredibly stable blood sugars over a long period of the day when I eat a sweet potato.

I had five russet potatoes last night for dinner and it still amazes me how wonderfully, deliciously full I can get on whole plants when leaving out the fats and salts and there's no digestive distress and no stress about unwanted weight gain. Having been a fat kid it's a miracle but now I have to really stuff myself to keep at a "normal" weight and I love it because I get to eat a LOT. :D

Skins add to the texture for me as well as the extra fiber...3-4 potatoes and I get 15-22 grams of fiber--- love that benefit( but eating plant based has me loaded with fiber....peas, broccoli, cabbage, corn, plus other root based fun (beets/turnips/onions/garlic/ celeriac)
