Luv and value your videos, books, and podcasts. I have learned the hard way that I must avoid the lectin foods u recommend to be avoided. I so wish you would provide info on how your recommended food listing be adjusted for sibo patients. I find I need to use Seibecker’s Sibo diet as a filter with your recommended acceptable food listing. This leaves a very limited array of foods to choose from and is troublesome for ensuring sufficient nutrition. I have POTs too so I need to be very careful as gut dysfunction or too little potassium and sodium aggravate a POTS flare. Also challenging when you have osteo and ensuring you get sufficient calcium intake. Can’t thank you enough for what I have learned from you! God bless you.

Boiling is a bit of a double edged sword though, as you might get more resistant starch but you will lose significant more water-soluble vitamins like the B6 and Vitamin C compared to baking

You can also boil the sweet potatoes and chill them before you eat them and you can still heat them back up . The cooling helps turn more of the starch to resistant starch

I pressure-cook these in Instant Pot. My favorites are Murasaki and Okinawa sweet potatoes. Stokes are good too.

What about steaming? Or my favorite cooking method — pressure steaming (=steaming inside a pressure cooker or Instant Pot)? Is that as good as boiling?

I usually boil sweet potatoes and carrots and ginger in vegetable broth and puree it, us that a good way to boil?. Thank you Doc.

What about steaming them? And there also seems to be a variety of colors from yellow, golden, deep orange (red) to purple. How much differences do these make?

Also important to mention is that sweet potatoes as well as the white potatoes contain glucose which is the worst enemy of the human body! Also both potatoes were man made by the Irish man back in the days who found the original red potatoe in the lake of titicaca in peru. They took it back to Ireland and through the process of hibridization they created stuff like the „russet potatoe“ or the „red rose“ which leads to one of the most if not even THE most important factor: it’s man made = there is no electricity in this food! Therefore your body is not able to gain nutricions out of that food because electricity is the key for your body to gain access to nutricions from food - without it it’s like wanting to start a car without the keys to it… 🤷🏼‍♂️
