This eggless, dairy free low carb bread is so much like the real thing without all the carbs! 🍞🥖

INGREDIENTS
1 ⅓ cups (135g) blanched almond flour
¾ cup (125g) vital wheat gluten
2 ½ teaspoons (8g) instant yeast
¼ teaspoon (1g) salt
2 ½ tablespoons (38mL) avocado oil or any oil of choice
1 cup (250mL) warm water, (105-115°F/ 41°-46°C)

Yields 12 slices (macros for slice)
NET CARBS: 1.5g
FIBER: 1.9g
FAT: 8.8g
PROTEIN: 8.5g
CALORIES: 123

** This is not a gluten-free recipe.

** NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.

I made this with change of flour ( I used Carbalose flour and I added Golden flax seeds). It was wonderful. The first loaf that hasn’t gone in the trash

I made this yesterday and it was amazing, 1 added 1/2 tablespoons erythitol to mine.Though my brand of pure avocado oil gave it a very very slightly light green colour. it still tasted so yummy.It’s such a struggle keeping my non Keto family away from this bread as it’s so delicious . this recipe works! I just pulled it out of the oven. In my experience, you can even tweak the almond for any other nut or seed flour. However, I kept half almond flour in my little experiment. I also added about a tbsp of nutritional yeast for flavor. Wonderful. So the recipe is so good, you can play with it a bit and it still works! Thank you so much, Ketoserts!

Just made this as a "focaccia" with rosemary and flakey sea salt, but using active dry yeast. It turned out amazing! Thanks for this wonderful recipe! :-)

I made this last night and had 2 slices of toast for breakfast, it toasted very well, looks like real bread, tastes good, it is very filling, I have sliced and frozen the remainder so can just get a slice at a time out. Thanks for the recipe.

Recipe sounds great, can hardly wait to try it. How much would you increase the recipe by to fit into a regular 8.5x4.5 pan; I was thinking by 50 percent?

Home cooking it’s been my thing. I also have done some cooking classes over all in the art of making breads. 3 years ago my health needed to go to low carb and eventually keto, etc, etc
All my food is been necessary to adjust to the new eating rules, fortunately is a lot of help and info out there thanks to people like you.
This bread is not only excellent but easy. The gluten developed very well but don’t let the bread rest for more than 40 mins because the rising is fragile.

just made this in my stand mixer.
Important tip...use the same size pan as in recipe. it will flatten out in the 8 x 5.

If you love crusty European bread, you will really enjoy it.

If you are an American sandwich bread purist, this will not make you happy....stick to indigo Nili Perfected egg white bread.

I enjoy crusty bread, so I enjoyed. I think that my vital wheat gluten may need to be fresher, because it tasted stronger in in my freezer unopened and past the expiration date.
