Sometimes, only sometimes, you have to eat an entire onion hehe. 😝
This dish inspired by Soğan Dolması (Turkish stuffed onions) but they find their place in many cuisines such as the Greek and the Balkan, this is my version. 🫶
RECIPE (4 servings, 80min prep time):
-6 big mama onions
Cut of the ends, make a cut lengthwise to the center and boil for 15mins.
Meanwhile preheat the oven to 200C/400F.
-1 cup (190g) red lentils
-a bunch of parsley, chopped
-3 cloves garlic, chopped
-3 Tbsp tomato paste
-2 Tbsp olive oil
-juice of 1 lemon
-1 Tbsp pomegranate syrup or agave
-salt and pepper to taste
-1 Tsp each paprika, cumin, ground coriander
-1/4 Tsp cinnamon
Mix well.
Carefully take off the layers of the cooked onions.
Add 1 Tbsp filling and roll up like a little pocket and place in a skillet or baking dish.
-550ml water
-3 Tbsp tomato paste
-1 Tbsp each lemon juice and agave
-salt to taste
-1 Tsp paprika
-1 Tbsp olive oil
Mix and pour over the onions.
Bake covered 30mins, take off the lid and bake for another 10-15mins.
Serve with garlic yogurt.

Dieses Gericht ist von Soğan Dolması (türkische gefüllte Zwiebeln) inspiriert, aber sie finden ihren Platz in vielen Küchen wie der griechischen und der Balkan Küche, das ist meine Version. 🫶

In der Zwischenzeit den Backofen auf 200 °C/400 °F vorheizen.

-ein Bund Petersilie, gehackt
-3 Knoblauchzehen, gehackt
-3 EL Tomatenmark
-2 EL Olivenöl
-Saft von 1 Zitrone
-1 EL Granatapfelsirup oder Agavensirup
-Salz und Pfeffer nach Geschmack
-1 TL je Paprika, Kreuzkümmel, gemahlener Koriander
-1/4 TL Zimt
Gut mischen.
Vorsichtig die Schichten der gekochten Zwiebeln.
1 EL Füllung hinzufügen, wie eine kleine Roulade aufrollen und in eine Pfanne oder Auflaufform legen.
-550 ml Wasser
-3 EL Tomatenmark
-je 1 EL Zitronensaft und Agavensaft
-Salz nach Geschmack
-1 TL Paprika
-1 EL Olivenöl
Mischen und über die Zwiebeln gießen.
Zugedeckt 30 Minuten backen, Deckel abnehmen und weitere 10-15 Minuten backen.
Mit Knoblauchjoghurt servieren.

As a Turkish person, i think you can add some Pomegranate syrup to it, it will taste much better!

This is my family's favourite way to use old leftover onions in Turkey, Soğan Dolması. I really love the way you always do justice to Turkish Recipes. Ellerine sağlık❤ You can try Gözleme too, similar to aroo paratha😊

Iraqis are famous for adding stuffed onions to dolma - at the bottom of the pot, where it caramelizes and absorbs all the flavours.

Get you one of those rechargeable handheld fans that can stand up. Direct the fan air across your chopping board while you cut the onions. The air will blow away all the gas the onions release. I tried this one day when just taking the skin off was making me weep. I ended up slicing up the entire load of onions, because I was so excited about the no onion tears. Gamechanger.

In India we have something called as sambar onions or baby onions which are like really sweet n are perfect for that onion craving
