Crying happens because there's a chemical reaction that happens when the cell walls of the onion are damaged, so like Matt said--if you have a sharp knife, you won't cry (or will be less likely to cry) because you're destroying fewer cell walls with a clean cut.

I saw a video saying the reason why you cry is because when you cut the onion the particles go to a watery surface which is your eyes but if you stick your tongue out it will go to your tongue

I think it also depends if they know not to cut off the root. Because whenever my bf's brother or aunt chop an onion, the kitchen gets filled with the fumes and it does make me cry and burn my eyes. Whenever I do it (and because of that info you gave), it doesn't make me cry when I chop the onions.

It’s because of an enzym called alliinase, it will release if you bruise the onion or cut it with a very dull knife. Wettening the knife before you cut the onion shoulds stop the effect

For a half-assed explanation:

Onions "sweat" when their cells take any form of damage, the reason a sharp knife is better is because it cuts more cleanly, the cleaner the less amount of damage.

I have used dull and very sharp knives and there is a huge difference when chopping onions (and literally everything). Listen to cooks when they advise you to sharpen your knives!

I worked as a prep cook at a fancy private school. We did large batch cooking from scratch. More than a couple times I had to do 22qt cambros of onions. My eyes are immune to onions now.

A cold onion helps. If I know I’m using an onion soon I’ll throw it into the fridge for an hour or two.
No time for that? Then cut your onion with your exhaust fan on…but you have to be near the fan. Works for me!
Or just keep your knives sharp.

Dull knives damage the onions cell walls more than sharp knives and that leaves to the fumes of the onions to burst more which makes you cry

I have cut my onions with the same not-super-sharp knife for years; sometimes I cry and sometimes I don't. I mainly cook with red onions which tend to be stronger in flavour. I am guessing it also depends on the onion you're working with.

Sharp knives work best. Also, if you pop your onion in the freezer for like 20 minutes before cutting it, that works pretty good. But yeah, sharp knifes, like thick thighs, save lives.

It’s not only about that. Many times You can buy very weak onions and even if You put the juice on your eyes it not hurt at all(seriously many onions are weak or grow improperly) and you will not cry.
