Thank you for the explanation of the different cuts, especially on the rounds. I've used both the rounds and chuck roasts many times. I've never tried the shoulder roast. The rounds and chuck roasts always turn out fine. My favorites are the rounds because they don't seem to be quite as fatty as the chucks. I usually shred them after cooking.

I noticed the sirloin tip roast is not included in this group. That cut always turns out perfect in a crockpot for me. The grocery store I went to last night did not have a sirloin tip so I got a chuck tender roast. It was definitely not tender and did not turn out well at all. I don’t know what went wrong but it was a total disappointment.

I just came across your channel, and I cook chuck roast in my slow cooker. I also place them in the smoker on occasion. One thing I've noticed when I slow cook them is that one part of the chuck roast is so flavorful and tender and has much marbling and another part of the chuck roast is tender but fibrous and with not as much flavor as the marbled part. I understand that without marbling the piece of meat isn't going to be as flavorful and juicy, but is there any way to tell which part of the chuck roast I'm referring to is the tenderest just by looking at it? I only ask because if I knew, I would cut it up in sections, and I would grill the marbled and juicy part and I would use the less marbled and less juicy meat for stew. Thank you for the information and the video.
