1 cup lentils (8oz | 200g)
4 medium potatoes (1.5lb | 700kg)
dairy-free butter
1/4tsp mustard powder
1/4tsp nutmeg
1/2 cup shredded cheese (5oz | 100g)
1oz | 30g dairy-free butter
2tbsp flour
1/2 chopped onion
3 minced garlic cloves
2 medium celery stalks
1/2 cup pomegranate juice ( 170ml | 4oz )
2 cups vegetable stock ( 500ml | 18oz )
harissa paste or hot sauce
200g mini carrots (7oz)
fresh thyme
400g baby button mushrooms (14oz)

ℹ️ Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
ℹ️ I use pomegranate juice. If you like you can use grape juice or red wine.
ℹ️ You can substitute harissa paste for sriracha, crushed red pepper flakes or cayenne pepper.
