INSTRUCTIONS for Cooking Lentils
---------------------------------------------------------
1. Measure and pick through 1 cup of lentils (I used brown lentils); be sure to get out all the little pieces that are not lentils...you don't want to cook that.
2. RINSE lentils well with water.
3. Into a medium-sized pot, PUT 3 cups water and a bayleaf. Bring to a boil.
4. ADD the rinsed lentils. BRING to the boil.
5. REDUCE heat to a simmer and COOK for 20-25 minutes. I cooked mine for 23 minutes.
6. Remove the bayleaf and let the lentils cool.
7. That's it. You're done.

I always add onions, either chopped and sauted before adding uncooked lentils, or adding a whole onion, cut in half with the root intact to cook with the lentils. I also add 3-4 cloves and sprigs of thyme.

Salting legumes before cooking can slow down the cooking process a little, but it doesn't make them hard. A lot of places say to salt from the beginning for increased tenderness.

Thanks for sharing but lentils is an exception. You can salt them early on and they will still soften quickly.

I gave up on cooking lentils and opted out on buying them in a can. Why? Because every time I cooked lentils they would come out so hard.

You can use chicken broth or non chicken broth, too.instead of water
