Creamy Chickpea Sandwich 🥪🥬

Honestly this may be the best sandwich I’ve made 😍☺️ Trust me its the only Chickpea Sandwich recipe you need, its JUST so good!

Here’s how you make this delicious Chickpea Sandwich at home ☺️

Ingredients:
Sourdough Bread - 2 Slices
Boiled Chickpeas - ½ Cup
Onion - 1/4th Cup
Cumin Powder - ½ Tsp
Chilli flakes - 1 Tsp
Hung curd - 2-3 Tbsps
Mustard - 1.5 Tsps
Lime juice - 2 Tsps
Salt & Pepper To taste
Coriander - 1 Tbsp
Pickled Onion - Garnish
Salad leaves- lettuce
Chutney Curd Spread/ Spread of your Choice

Process :
* Soak the chickpeas overnight and boil them, drain them & allow them to cool down
* To a mixing bowl, add in the boiled chickpeas & mash them - add the hung curd, onion, cumin pwd, chilli pwd, mustard, lime juice, salt & pepper to taste, finely chopped coriander leaves & give it a good mix
* Meanwhile, toast the bread until golden brown & crisp on both sides
* To assemble the sandwich - apply the spread of your choice to the toasted bread( I mixed hung curd with green chutney) top it up with 2 salad leaves, add in a generous layer of the chickpea filling along with some pickled onions & more salad leaves - close the sandwich with another toasted bread
* Slice, Serve & Enjoy 🥪🥬
