The best spaghetti bolognese recipe

Bolognese sauce known in Italian as ragù alla bolognese, pronounced raˈɡu alla boloɲˈɲeːze, ragù bolognese, or simply ragù, is a meat-based sauce in Italian cuisine, typical of the city of Bologna. It is customarily used to dress tagliatelle al ragù and to prepare lasagne alla bolognese.

Italian ragù alla bolognese is a slowly cooked meat-based sauce, and its preparation involves several techniques, including sweating, sautéing and braising. Ingredients include a characteristic soffritto of onion, celery and carrot, different types of minced or finely chopped beef, often alongside small amounts of fatty pork. White wine, milk, and a small amount of tomato paste or tomatoes are added, and the dish is then gently simmered at length to produce a thick sauce.

3 Tablespoon olive oil
200g Ground beef
200g Ground pork
Salt
Black pepper
1 large onion, finely chopped
1 carrot, finely chopped
1 garlic cloves, grated or finely chopped (optional)
100 ml white wine, or red if you prefer
500 grams good quality can tomato puree/passata
Grated Parmigiano-Reggiano

I’m from Bologna… it’s not the worst recipe lhave seen in internet, but it’s absolutely not correct. I tell you.
Onion, carrot, celery cutted in little pieces. In olive extra virgin oil. Half beef meet and half pork meet. Red wine and put high fire for two minutes. Than three spoons of concentrated tomato. It needs 3/4 hours cooking, and every times it becomes to be dry put vegetable broth. The last time put milk. If you want, with fire off, a little parmesan. Possible half spoon of sugar and a little pepper. Absolutely NO garlic and NO basil. OK?

Nice fond in that pan! I would have used the red wine to deglaze instead of adding it as flavoring towards the end.

Why you adding wine at the end, isn't it supposed to be poured in with unions carrrots beef to deglaze the pan? Why at the end? Did you cook the wine out or something?

Il ragù va "sempre" sfumato con il vino. La salsa di pomodoro va allungata con acqua e il formaggio non va messo nel ragù ma esclusivamente a piatto finito.

The oil you have put is not OLIVE OIL It is vegetable oil, and no celery :(

This is about as authentic as a pizza from The Pizza Hut. A genuine Bolognaise uses pork and beef mince, red wine just after the meat is browned - which should tale at least ten minutes - no garlic, and you would never grate the carrot. You're supposed to be able to see what's in it. Which is also diced celery. It's also suppose to be quite dry. Happy you're happy bro, but this is totally wrong.

That is one very confused Bolognese sauce, if you cant cook a soffritto, it isnt a Bolognese sauce.

That's not Bolognese. A kind of Bolognese sauce, maybe. Sorry, but too many things are missing for an authentic Bolognese.
