Do you have to hang the pieces? Is it ok to just lay the pieces directly on the grate above the plate setter? OK course you have to be carefull that they don't fall through. Or, what about hanging on skewers from the grate? I can't wait to try this.

I’ve had my meat marinating for about 4 days, little longer than I wanted but haven’t had the time to do it but tomorrow is the day. Looking forward to this “drying session”. I’ve done jerky on my dehydrator but this will be my first on the egg. Can’t wait. Thanks Ron.

Thanks for the video on how to do this. My biggest problem is keeping the fire that low. You must shut the bottom vent and leave the top vent open?
