High Protein Roasted Chickpea Salad

Ingredients:- For Chickpeas
3/4 cup dry chickpeas
1 tsp oil
1/2 tsp each salt, red chili & cumin powder
For salad:-
1/2 cup cucumber
1/2 cup tomato
1 carrot, grated
1/4 cup onion
1 avocado
1/2 cup colorful bell peppers
1-2 green chilies
1 inch ginger
1/4 cup coriander leaves
1/2 black salt
1/2 tsp roasted cumin powder
1/2 tsp red chili powder
1 lemon juice

Soak 1 cup dry chickpeas overnight then pressure cook for 4-5 whistle or until soft. Drain all the water. In a pan heat oil then add cooked chickpeas, and spices. Roast on low heat until dry or crispy ( as per taste). You can also air fry them. Let the roasted chickpeas cook completely then transfer it to a mixing bowl along with all the chopped veggies (you can use any veggies of your choice), walnuts, spices, lemon juice and coriander leaves. Combine everything well and enjoy!
