Skillet Mexican Street Corn
2 cans corn, drained
2 Tbsp butter
2 tsp minced garlic
1/2 cup chopped cilantro
2 Tbsp mayonnaise
2 Tbsp sour cream
1/4 cup cotijo cheese
1 tsp Everything but the Elote seasoning (or use a combo of chili powder and cumin)
Salt & pepper to taste
Lime juice, optional

Melt butter in a skillet. Add garlic and corn and cook until the corn gets a little charred. Add Mayo, sour cream and seasoning. Cool until Mayo and sour cream are warmed through. Add cilantro and cotijo. Add lime juice if desired.
