Mexican-Style Street Corn

Here is what you'll need!

Mexican-Style Street Corn
Serves 3

INGREDIENTS
3 ears of corn, hulled
3 wooden skewers
¼ cup melted butter
½ cup mayo
2 cups cotija cheese
3 teaspoons chili powder

PREPARATION
Boil the corn for about 5 minutes.
Push a skewer through the middle of each ear of corn.
Drain, then brush them evenly with the melted butter.
Spread a bit of mayo all over each ear of corn.
Scoop the cotija cheese generously on the corn, making sure it covers all sides.
Sprinkle a little bit of the chili powder evenly across the corn.
Serve!

When I went to visit my family in Mexico, everywhere you looked, there would be a man or a woman selling corn with their carts... It was awesome. But there was also a lot of stray dogs. I stayed in my cousins house, and we fed 2 puppies. Everyday, we would see the puppies at the front door. I loved those dogs and I will never forget them.. My cousin told me that they are still there

Corn does not cook / boil in 5 minutes... Around 10 minutes is good usually.

I made this today. I mixed the 1/2 cup of mayo with 1/2 cup of crema. It was delicious! The lime juice really brings out the flavors. Soooo good!!! I would probably add a tiny bit of cayenne pepper to round every thing out.

I like when the corn is cut off the cob and all the ingredients are mixed in a cup or bowl. That little Mexican stand outside of Fuel City in Dallas has the best!

actually, the Pico de Gallo chile powder is what they use on elote, not Tajin. Tajin is used mostly on fruit and beer and has a tangier flavor.

At our local swapmeets and flea markets you can usually buy this,  but not on the stock and instead in a cup. They also have various sauces and spices to mix in. It goes good with lemon/lime and chili salt.

Looks great! If you steam the corn for 20 minutes, instead of boiling, it's so much more crunchy!

All these food experts!😒😒😒😂😂 obviously not everyone in Mexico makes corn the same way. This is one of the ways you can make it. I'm from Chihuahua and we do put butter on it, or mayo, or both and limon and either chile en polvo or liquido, it's all personal choice. I've never tried it with crema but I'm not saying it's wrong i actually wanna try it with crema now lol
