£1 Vegan Lentils Stew | Family Meals on a budget

It is traditional to make lentils stew with plenty of cured meats in Spain but at home, we frequently cook them only with vegetables so they are lighter and less fatty but still full of flavor. This dish is so healthy and nutritious and we should all be eating it very often, so enjoy!

INGREDIENTS

100ml extra virgin olive oil £0.23
1 onion, thinly sliced £0.14
2 stalks of celery, cut into chunks £0.11
3 carrots, cut into chunks £0.15
1 head of garlic, thinly sliced £0.23
1 small green pepper, large dices £0.27
1/2 tbsp smoked paprika £0.07
1 tsp cumin powder £0.05
2 bay leaves £0.10
1 tin chopped tomatoes £0.28
3 tbsp vinegar £0.06
2 potatoes, cut into large chunks £0.20
300g lentils £0.70
1 pinch of dry oregano £0.05
25g of parsley, coarsely chopped £0.50
Salt £0.01
Pepper £0.01
2 litre of water £0.00
1 cube of vegetable stock £0.05

TOTAL: £3.21 / 4 = £0.80

Fantastic recipe and I have recently become a fan of lentils. The trick is in the herbs and spices that are added to make it truly delicious, and this is.

For this recipe, I think I'd add yet another vegetable: chorizo. It really does improve the flavor.

I'm Spanish and I make vegan lentil soup that my grandmother makes. It's simply brown off 3-4 smashed garlic cloves in 2-3 tablespoons olive oil 'till almost dark brown on high heat. I tilt the saucepan on its side and stand there holding it. This is VERY important (To brown the garlic) as it gives the lentils soup its unique flavour. Boil 6 cups of water in a kettle. Once the garlic is ready, take saucepan off the heat and add 1 cup dried brown lentils. Stir to stop the heat of the oil further cooking the garlic- you don't want it getting black or you'll ruin the soup. Add the 6 cups of hot water slowly so the oil doesn't splutter and put pan back on the heat. Roughly chop 1/2 a butternut pumpkin, a tomato in 1/4's, an onion in 1/4's, take a whole cob of corn, chop in half then run a knife down the kernals so you have fully removed all of them off the cob and throw them in the bowl. Throw away the cobs. Add contents of bowl to saucepan. Add one whole bag 120gm of baby spinach. 6 vegan stock cubes and 1 tablespoon spanish paprika. Stir and cover and allow the entire thing to come to the boil. About 10 minutes. Then turn to low heat and simmer 30 minutes. Done!! It's so simple and rustic, there's no need for fancy chopping and I sometimes don't even peel the pumpkin at all. I like my soup pureed with a stick blender. To make it for carnivores you simply fry some chorizo and a thick cut of bacon and add to the pot and use chicken or beef stock cubes. Optional to add potatos which can be briefly pan fried beforehand. Increase the water to 7-8 cups for this extra vegetable and meat.

This recipe is OK, but the flavor gives the impression that something is missing. Obviously, chorizo 🤣 It might work nicely topped with a fried egg or with some parmesan cheese. It just really needs more fat and umami to balance out the tomato.
