I was a cook in a Chinese restaurant for a few years, in charge of all the fried rice and noodles. The broth is used to prevent the rice from drying out too much in the insanely hot wok. When you make fried rice without a lot of sauce in it, it's absolutely required to use broth or even regular water. Your rice will otherwise burn before it's ready!
