Dan Dan Noodles Recipe That Will Change Your Life - The Best Sichuan Street Food

Dan Dan Noodles (担担面, Dan Dan Mian) is a very popular Sichuan street food in China. We will make Dan Dan Noodles in this video as authentic as possible in my kitchen. With toasted Sichuan peppercorn and sesame paste, this noodle dish provides nice aromatics with creamy and intense umami flavors. The noodles will be topped with cooked pork toppings, bok choy, and crushed peanuts and you get to mix it around with the sauce before you eat it. It is how it's serviced on the streets. Lastly, you can top it with more chili oil. Sichuan chili oil is an ingredient that goes into the sauce so if you have a good amount of homemade chili oil, more power to you. Ingredients:
1. Sauce:
½ tsp ground and toasted Sichuan peppercorns
2 tbsp Chinese sesame paste (or tahini)
3 tbsp dark soy sauce
1 tbsp black vinegar
1 tbsp brown sugar
2 tbsp chili oil

2. Meat topping:
½ lb Pork
2 tbsp vegetable oil
½ minced ginger
4 garlic cloves
2 tsp doubanjiang (fermented chili bean sauce)
2 tbsp dark soy
2 tbsp shaoxing wine
½ tsp five spice
2 tbsp Sui Mi Ya Cai (preserved mustard green)

3. Noodles & Other toppings:
1/2 lb of wheat noodles (Medium round noodles thicker than somen)
5-6 bok choi leaves
5-6 crushed roasted peanuts
2 chopped green onion
chili oil
