Let the meat marinade 24hs in the seasoning... Also inject inside the meat... Otherwise will be very flavour outside and tasteless inside

It looks good, but I saw another video where the guy removed that chewy layer of fat in the middle before cooking it. That fat seems to overwhelm it and it will not render. I bet if you removed it that you would like it even better.
