Filipino Style Muffin (Kababayan)

Kababayan muffin is a Filipino Style Muffin that is soft and fluffy, sweet and moist, yellow in color that resembles "salakot" or traditional headgear of Filipinos. A staple in Filipino bakeries and a favorite snack.
Here's what you'll need:
2 and ½ cup all purpose flour (310g)
2 tsp baking powder (8g)
¼ tsp baking soda (1g)
1/2 tsp salt (3g)
3/4 cup sugar (150g)
2 eggs
1 and ¼ cup milk (evap or fresh)
¼ cup melted butter (55ml)
¼ cup oil (55ml)
2 tsp vanilla (10ml)
This is optional: 3 to 5 drops of yellow food dye
-This recipe yields 14 to 16 medium sized muffins
1. Preheat oven at 180C/350F. In a large mixing bowl, sift flour, baking powder, baking soda, salt and sugar. Give it a mix.
2. Add eggs, evaporated milk, oil, melted butter and vanilla. Mix until no lump is visible. Do not over mix. Add 3 to 5 drops yellow food dye (optional). Scrape sides and bottom.
3. Brush muffin or cupcake tray with oil or melted butter. Scoop about 1/4 cup of batter in each hole.
4. Bake in the preheated oven for 16 to 18 minutes or until fully baked.
5. Let it cool down. Serve and enjoy!
