Higher protein mashed potatoes with a mushroom sauce 💥

Absolutely loved this one, not just because how extremely simple it was but also how easy it is to use for meal preps with any kind of protein on the side

Peel and dice up 8 medium russet potatoes
Boil till tender and drain/ set aside about 1 cup

Now add 1 container of good culture low fat cottage cheese and 1 cup whole milk in a blender and blend till combined/smooth

Add that back to your potatoes

Season with salt, white pepper, garlic, onion and parsley. Add some sautéed garlic and onions for more flavor.

Now blend until smooth

Last that bone broth mushroom sauce.

Add 3 cups beef bone broth to a sauce pan with 2 cups baby Bella mushrooms.

I did a small rolling boil until it reduced by half then let cool slightly.

In a blender add your mushroom broth and that left over cup of boiled potatoes.

Blend for about 1 minutes

Last lather up that plate and enjoy!
