I'm from the South.
Tomato sandwiches or tomato/onion sandwiches with ice cold milk is one of my favorite meals.
I use Bama mayo. This is the 1 sandwich where I'm a little heavy handed with it.

I took care of a lady that was from Jersey and she said that they have the best tomatoes up there. Kentucky does as well, I now live further south and I miss KY tomatoes SO much. This looks delicious.

Yum Jersey tomato’s are the best. Bring back so many memories growing up in Hawthorne, NJ. The only thing I would not put on the sandwich are anchovies

Jersey girl here. Your take on a mayo-free tomato sandwich is stunning! A sweet burrata bottom and a pungent anchovy top are perfect enhancers for a pile of juicy Jerseys! Lettuce doesn't belong, but beautiful basil is exactly the right choice. (Although fresh mint would also work well, taking this sammy in another interesting direction entirely.)
