When we were prepping chestnuts for a beef wellington for Christmas dinner, we found a YT video that suggested scoring the chestnuts around the middle of the nut instead of marking with an X. It made shelling them so much easier. We roasted them in our counter top convection oven. Only thing we will do different for next year, will be to add even more moisture, as the nuts can dry out.
