Chicken Fajita Pasta
Servings - 2 - 3
INGREDIENTS
(Chicken Marinate)
Chicken - 250 grams
Lemon juice - 2 tablespoons
Salt - 1/2 teaspoon
Black pepper - 1/2 teaspoon
(Fajita Seasoning)
Paprika - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Black pepper - 1/2 teaspoon
Red chili - 1 teaspoon
Garlic powder - 1/2 teaspoon
Salt - 1 teaspoon
(Rest of the Preparation)
Oil - for saute
Bell pepper - 260 grams
Onions - 60 grams
Garlic - 1 tablespoon
Fajita seasoning - 1 tablespoon
Tomato - 150 grams
Fajita seasoning - 1 tablespoon
Boiled pasta - 250 grams
Fresh cream - 200 grams
Cheddar cheese - 50 grams
Mixed herbs - 1 teaspoon
PREPARATION
(Chicken Marinate)
1. In a mixing bowl, add 250 grams chicken, 2 tablespoons lemon juice, 1/2 teaspoon salt, 1/2 teaspoon black pepper and mix well.
2. Marinate the chicken for 30 minutes.
(Fajita Seasoning)
1. In a bowl, add 1/2 teaspoon paprika, 1/2 teaspoon cumin powder, 1/2 teaspoon black pepper, 1 teaspoon red chili, 1/2 teaspoon garlic powder, 1 teaspoon salt and mix well.
2. Your fajita seasoning is ready. Keep aside.
(Rest of the Preparation)
1. In a pan, heat some oil and add the marinated chicken in it. Cook until chicken is done. Set aside.
2. In a another pan, heat some oil, add 260 grams bell pepper, 60 grams onions and saute for 2 - 3 minutes.
3. Add 1 tablespoon garlic and stir well.
4. Add 1 tablespoon fajita seasoning and mix well. Set aside.
5. Heat some oil a heavy pot, add 150 grams tomato and saute for 3 - 5 minutes or till the tomatoes get soft and pulpy.
6. Add 1 tablespoon fajita seasoning and mix well.
7. Now, add cooked chicken in it and mix well.
8. Add 250 grams boiled pasta, cooked veggies in it and mix it well again.
9. Now, add 200 grams fresh cream, 50 grams cheddar cheese and mix it well. Cook for 2 - 3 minutes.
10. Add 1 teaspoon mixed herbs and mix well.
11. Serve.
