my nana used to make me this cake every year for my birthday because she knew it was my favorite. Just seeing this made my heart happy. I miss her so much. Thank you for bringing back some of that love.

Funny thing, my grandmother used to make this cake 😂 I too was initially repulsed by the idea of sauerkraut... alchemy is the only explanation for how good this cake is

I think when you soak it in water it gets rid of most of the actual taste of the sauerkraut and you're left with the natural sugars within the cabbage and the nice, crunchy texture acting like coconut

Time for a fun fact!

The reason Sauerkraut works well in this recipe is because first, it adds a nice moistness and tenderness that is buoyant, not dense. Secondly, there is a slight acidic tartness or tang that adds backbone to sweet desserts and actually complements the chocolate, much in the same manner that buttermilk or sour cream does. Finally, there is a nice textural element that is similar to coconut as mentioned in the video.

Sometimes it's better to broaden your mind and learn what works for meats and slaw, can also be used in a sweet application.
