For anyone curious, this is actually surprisingly common. The starch in potatoes can effectively replace flour when baking, and there's even a product called potato flour (basically a potato that is baked, dried out, & milled into powder) available as a gluten-free alternative to ragular flour.

Actually here in Indonesia, we have a TON of baked goods and pastries with potato in it. We do have potato cake, potato doughnut, potato pancake (the sweet one), kueh lumpur, and the list goes on.. Potato is basically a magical ingredient!
