This might not be an authentic Greek recipe, but it’s certainly inspired by Greek cuisine, and I really loved how this came out. This simple feta, spinach, and potato casserole would make for a great Easter holiday side dish option. Enjoy!

I grew up eating Spinach & Potatoes, and at 70 I still make it. Canned spinach (undrained) mixed with lumpy mashed potatoes, butter, and salt. I have lots of feta, potatoes, and mint but no fresh spinach. So I’ll try it using my old standby, canned spinach. I’m sure it’ll be delicious. 😊

The printed recipe calls for turning the wilting spinach with tongues. This proved nearly impossible for both me and my wife (who singed her hair in the attempt). If you insist on trying anyway, select a very wide pan and induction cooktop for the job. The taste of the finished dish did make up for the burns though, so next time we'll try turning the spinach with tongs.

Everything in this recipe can be made kosher for Passover, too, and would be a gorgeous dish for a seder feast. Sounds and looks wonderful!

Thank you for teaching me how to cook. Every weekend I travel to my parents home and cook one of your recipes. The corned beef was awesome. I was going to make your moms potato au gratin to go with our Easter ham, but I have to try this instead??¿?

It made me giggle at the end because, despite it only being a "prop" chop, not a future video, and not the subject of this video, you still cut into and tasted it first.
The casserole might be good, but meat is still better. :D
