High protein egg roll in a bowl! Easy weeknight meal!

Eating healthy doesn’t mean eating boring rabbit food all day. Healthy eating can be exciting!
Check out this easy to make high protein egg roll in a bowl recipe! Plus for the extra razzle dazzle, make your own duck sauce!
If you want this to be low carb, simply sub out the crispy wontons.
Ingredients
4 chicken thighs (boneless and skinless)
1 lb jumbo shrimp (cleaned, peeled, and deveined)
2 tsp kosher salt
2 tsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
2 tsp Flora and Mana Tandoori seasoning
2 tsp paprika
Fresh Express Asian cabbage mix (minus the sauce and wontons. Save for a later recipe)
1 tbsp Gourmet Garden garlic paste, ginger paste, and jalapeño paste
1/2 cup diced white onion
6 wontons sliced thinly
3 diced scallions
Avocado oil spray
Oil for frying
1 tsp mirin
1 tsp rice wine vinegar
2 tsp low sodium soy sauce
Duck sauce Ingredients
1 tbsp garlic paste
1/2 cup sweet chili sauce
1 tbsp rice wine vinegar
1/3 cup apricot jam
Directions
Spray your chicken thighs with avocado oil spray.
Divide the seasoning amongst the chicken and shrimp.
Place the chicken in the air fryer at 350 degrees for 22 minutes (this includes the preheat time).
While the chicken is cooking, spray a pan with avocado oil spray.
Cook your shrimp 2 minutes per side.
In a separate pan, add more avocado oil spray.
Add the garlic, ginger, and jalapeño paste.
Mix in the bag of cabbage mix and onions.
Add in the mirin, rice wine vinegar, and soy sauce.
While that cooks down, take some oil into a pan and put in enough to gently fry the wontons until crispy.
Remove the chicken from the air fryer and dice.
Add the diced chicken and shrimp into the cabbage mixture.
Add in diced green onions and half of the wontons.
Mix all of the duck sauce ingredients into a small bowl.
Serve with additional crispy wontons, duck sauce, and enjoy!
