So my grandparents do that thing. They add just enough water and a ladle of oil and close the lid real fast. Waiting a bit and opening to find the water steamed out the oils crisped the skins and they come out perfect.
I can’t do that, I just put them to steam and add them to a super hot wok after. I don’t have the old world

the cornstarch is actually there to create a thin crispy layer of basically rlly thin pancake after the water boils off to keep the rows of gyoza together and to create a more interesting textural profile

Here's his recipe: he mixes the ingredients, puts them in the wrapper, steams them, then frys them. I know his recipe is probably secret but like, why would you say you're going to tell us and then not? :p

I also tell when pasta is done by an internal clock, I don’t trust the time on the packaging to not overcook it haha. I love gyoza though, I wish there were more places near me that made gyoza
