EPISODE 3: Sweet Treats of India
Ghee Mysore Pak from KARNATAKA

Recipe
1/2 cup (55g) Besan/Gram Flour
1/2 cup (110g) Melted Ghee
1/2 cup (100g) Sugar
2 tbsp Water

⭐️ Roast gram flour on a low flame until raw smell is gone but it should not change colour will take 5-7 mins.
⭐️ Sift the besan and whisk half of the ghee into it until smooth paste is formed
⭐️ Place sugar and water in a pan and boil until you get a one strand sugar syrup. you can test by taking a drop of syrup in a bowl and then press it between your fingers it should form 1 strand.
⭐️ Add the besan mixture into sugar syrup and whisk until mixture becomes smooth. Cook this on medium low heat
⭐️ Add 1 tbsp of ghee and mix until smooth. Repeat the process until all the ghee is used up. Remember to stir continuously
⭐️ Cook the mixture until it leaves the sides of the pan. Entire process should take around 10mins.
⭐️ Place parchment paper at the bottom of a small loaf pan and coat all sides with ghee.
⭐️Add the mysore pak mixture in the loaf pan and press it to level it.
⭐️ Set it for few hrs. Unmould, cut and serve!
