The REAL secret to a delicious steak isn't when you salt it, how long you age it, or resting it before slicing in. It's definitely 99% dependent on the quality of the meat.

All the beef we had at @ituscani came from the Chianina cattle that graze nearby in the Tuscan hills and was seriously the most tender meat I’ve ever had. If you visit Florence, I highly recommend stopping by the restaurant with an empty stomach. As the name suggests, all the wine, cheese, honey, boar, beef, olive oil, and even the wood for the tables at I’Tuscani come from Tuscany.

It’s worth trying the appetizer board with a bit of everything, including the raw beef, carpaccio, and wild boar mortadella. A trip to Florence is truly incomplete without tasting both the beef and the wild boar, so that’s a great way to taste both at their best.

But whatever you do, don’t skip the meatballs. They aren’t as glamorous as the Florentine steak, but they were insanely delicious.

I went in panzano to eat at Dario Cecchini's restaurant over his butcher shop last year and it was unreal. By far the best meat I had, and it's not even close. Everything actually, the potatoes, his chianti butter, his salt blend and the faglioli, I never imagined beans could be this good. The lunch lasted 3 hours, and an old local tried his best to have a conversation with me the entire time. Best 50€ I could've spent.

It is a different way of cooking meat, I live in Tuscany, therefore for me it is the right and traditional way of eating meat.
I personally don't like the idea of flavoring the meat to much, just a bit of salt and rosmary either before or after cooking (many don't even put salt on it).
The Fiorentina is one of the best cuts out there for me, the tenderness of the meat which remains rare inside ("al sangue" in italian), the way of cooking it with coal, which burns hotter than wood, and the tradition of cooking it upright on the T bone for some minutes to also cook the inside slightly, it just makes it perfect to me, simply awesome.

Bro in Spain in all the “asadores” we prepare the steak in the same way. No seasoning and directly to the grill. We also have great “vacas” specially one species called “vaca gallega” from the northern part of Spain. We also eat meat super rare because we have a very high standard quality control ! Great video

I just arrived in northern Italy today, Lucca. I went to a Eurospin and saw the amazing Italian beef, it’s so huge and SOOO tender to the touch, I haven’t cooked it yet but I’m planning to cook it. They had there a HUGE 1.5kilo Italian beef porterhouse so tender for cheap, and after converting to freedom measurements it’s about 9$ a pound 🤯
