Who says you cannot fry eggs using stainless steel pan? This is an effective way of cooking eggs without using toxic nonstick pans.

Basically the Leidenfrost effect is making this bare steel pan non-stick. The droplets of water and skittle across means that effect will happen once the egg is dropped in, also with a buffer of superheated oil to transfer the heat to the egg so the proteins starting binding up and solidfy before it reaches the steel.

The problem is the eggs cook too quickly on the bottom and get way too crispy. This is why I use cast iron. My eggs are perfect without being overdone on the bottom.. if you like them that crispy…then more power to you.

It's a bit more fussy than the demonstration but I get to the pan up to the point where the water looks like mercury then I turn down the burner, let the pan sit for a minute, then add a small amount of grapeseed oil. I use a paper towel to wipe it around the pan and then I add a pat of butter. Sometimes the pan is still too hot and the butter browns, but sometimes I get it right and it just melts and bubbles, at which point I put in the egg. The combo of the oil and the butter seem to do the trick as the egg doesn't stick. When I flip it for over-medium, sometimes I need to coax the yolk to let loose...but mostly I get good results this way.

The oil turns into unhealthy oil when it reaches a temp.that te oil starts to smoke.

It must be me. I have watched several YouTube channels with these same instructions, but my eggs still stick. The only result I got with the water test is it evaporated fast. For some reason, I am not able to achieve the BBs.

Why does no one actually flip the egg on these stainless steel pan videos? None of these videos are useful for cooking eggs over easy.

Doesn't work for me. I've tried this and many techniques eggs still stick. But for some reason when I make it with scrambled or an omelette I have no issues.

The major problem is look at all that oil even if it was olive oil-not heathy whatsoever.

It looks like you added more oil, nothing sticks for me except when I'm trying to fry eggs and I don't like to use a lot of oil.
