Stop gatekeeping cooking. There’s absolutely no reason that someone shouldn’t cook an egg on cast iron, carbon steel, nonstick pans, or whatever pans they have. Stainless steel is used in restaurants because it is extremely durable. In a home kitchen where it’s not being used all day everyday, there’s no issue with using nonstick pans.

As a chef this hurts, not just the egg but also implying that I have the time in-between orders to check if my pan is hot enough with a couple drops of water. I use SS pans, non stick pans, whatever. My experience knows how to work every kind of pan/skillet and that's enough😊

You're pan wasn't hot enough, the water should dance around the pan with almost zero resistance. What's happening is the water in contact with the pan is evaporating as soon as it touches, causing the water to "hover" over the pans surface. This is called the leidenfrost effect (don't check my spelling).

A little butter does help but any pan is nonstick with enough butter.
