Honestly not traditional Mexican enchiladas, but these look delicious!! What's amazing about cooking is you can make adjustments for your preference/liking.. for your family. Add your own flare to it. I've tried many enchiladas and whether they are authentic Mexican enchiladas or not, they've always been delish. It's hard to go wrong with chili, corn tortillas, cheese, spices, meat.. I mean come on lol good job!! I love your positive & happy voice! Oh yea & for the person who complained about the greens on top, its so good like that!! But again make your food your own 😊 not everything is for everybody.

Those tortillas are going to crumble most of the time, either when you roll or when the sauce dissolves them. To prevent this, brush both sides with some oil and throw in a 400 degree oven for 5 minutes before rolling. They will soften up and the oil will keep the sauce from penetrating too much and making it soggy.

My elderly mother who’s hard to please even said these were good! lol This is one of our family favorites including the kids. Super easy and tasty.

I like to add some sliced black olives inside and also sprinkle some on the top. Makes it good.

I don't have taco seasonning but i have cumin, paprika, onion/garlic powder, would that work?

*Chicano* Enchiladas, Mexican Enchiladas are with Queso Blanco (de la Vacita) :)

But these Chicano Enchiladas are what I grew up with, They're Good, Well almost Every Enchiladas are Good.

My husband family does it some what similar too except they don’t add onion but onion powder

I steam my tortillas well corn tortillas before I lmake them other wise they break up on me

two tablespoons chili power
1/12 teaspoons cumin
1/2 teaspoon onion power
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon oregano...

Should put the tortillas in the microwave for a few seconds to soften them up so they roll better and don’t break.

Boil some chicken with some spices and a bouillion.. its an extra 15 minutes but worth it.

At least you're using corn tortillas and not flour tortillas!

You need to heat up the corn tortillas in a pan with a bit of oil or butter and flip then you roll up the taco
