CHICKEN ENCHILADA CASSEROLE: Quick, Easy and Absolutely Delicious!!!!

The weather drop and today I’m going to share with you my family’s favorite CHICKEN ENCHILADA CASSEROLE, now let me tell you if you like enchiladas like my self you are most definitely going to LOVE this one, trust the process and trust me each ingredient is what makes this delicious casserole super delicious, it’s perfect for busy weeknights ☺️ So I hope you enjoy it as much as we do❤️

blender- Vitamix A3500

Ingredients:
12 corn tortillas
2 cups of green enchilada sauce (las Palmas hot my fave)
1 cup sour cream
4 oz diced green chiles
1 can of Campbell’s cream of mushroom soup
1 rotisserie chicken, shredded
Shredded Mexican blend cheese
Salt and pepper to taste

Woah! This looks like the real thing! When I lived in Albuquerque, they would serve green chili chicken enchilada casserole at the cafeteria at work. I got (and then lost) that recipe, but it was very close to this. I'm definitely going to make it! One of my favorite New Mexico dishes!!! Thank you, Claudia!
