Recipe:
2 Pound Chicken Breast
Optional can coat chicken in flour 1 cup
1 tsp kosher salt on chicken
1/2 to 1 tsp pepper chicken
1/2 to 1 tsp paprika chicken
1/2 to 1 tsp oregano chicken or Italian seasoning
1/2 to 1 tsp garlic powder chicken
1/2 tsp coriander chicken
Slightly cover cast iron pan in oil to sear chicken olive oil
Add 3 tbsp butter with oil and baste and sear chicken breast
Sauce:
1 tsp minced garlic sauce base
1/2 onion sweet white or yellow
1/2 to 1 tsp or Italian seasoning oregano optional
1 tsp parsley if using 1 tsp Italian seasoning don’t need
1/4 to 1/2 cup sun dried tomatoes
1 tsp djion mustard
1 to 2 cups heavy cream
1 cup chicken broth optional can deglaze pan with it mixed with Dijon or add at end to loosen sauce.
A touch of honey optional
1/2 to 1/4 tsp salt kosher
1/4 tsp pepper
1/4 to 1/2 cup grated Parm
Instructions:
For breast cook 3 to 4 min per side on medium heat
Now remove from pan and add onions till translucent then add garlic till fragrant and then add tomatoes
Add cream and rest of seasoning and bring to boil. After boil bring to simmer and reduce to low to simmer and Add Parm and stir till thick add 1 tsp parsley. Should take 3 mins. Return chicken breast to skillet and heat through for 1 to 3 mins
