A little chemistry for you guys.

Spicy sauces made with oils like yours take months to years to get weaker, because the oxidation of the capsaicin and the lipids that oil are very slow. Therefore your sauce will get HOTTER over the following weeks and months of being made, and will take probably take a years to start getting weaker.

It is very important to use oil (and not vinegar like some do) to make your hot sauce because capsaicin is a lipophilic molecule, meaning it dissolves in oil and fats. It will still take a while for the capsaicin to diffuse from the cells of the plant since the cells need to break down in order to release the capsaicin to your oil, for it to then be dissolved in, meaning your sauce will be hotter if you wait a couple of weeks.

One process we do here in Brazil to accelerate the sauce making is putting it in the sun on the first days, the heat increases the solubility and diffusion rates, is also helps with cellular breakdown through protein denaturation and some enzyme activation that helps with the flavor. UV light also rapidly accelerates the cell breakdown (same thing that happens to you).

Don't leave it in the sun too long though because even though capsaicin is a pretty stable molecule it will still degrade through oxidation, so leave it for only a couple of days.

Yes spicy oils/sauces usually tend to get less spicier but i feel like even tho it's lost some of its potency of spice it gained more flavor with a kick of spice thats enjoyable, not saying its not enjoyable when it's super spicy but its More tolerable with a better flavor keeping some of the spice.

I grew up with these peppers. If you ever visit Southeast Asia. You will see the locals take a bite of this pepper with each bite of whatever they are eating. I know people who have to have like a handful with every meal.

My grandmother used to have a pepper oil she used. It was more vinegary and made collard greens taste incredible.
