I'm so glad you jumped away! A lot of people's instinct is to grab at what is falling, molten sugar is so dangerous.

A small tip that I use in my restaurant, instead of the classic water and brush method, dissolve the sugar in water (½ cup water for 1 cup of sugar) and place a lid on the pot whilst it caramelises. This allows the steam thats formed to circulate and clean off the sides of the pot so there's no burning. Potentially it also developes the flavour a little more, but that's anecdotal.

I actually appreciate Andy pointing out hot sugar is dangerous!!

If you spill hot water, oil or whatever, just get away from it, also do not try to catch hot things or sharp knives!

Hot water sucks, hot oil also sucks, sugar is especially nasty cuz it's STICKY, having hot, hot sticky anything will do a lot of damage, so just avoid it

Stay safe out there folks, you're more important that the food :)

The state of that sauce pan that fell, mad respect! Despite the multitude of followers, using an older pan shows being frugal and knowing the value of your expertise versus showing flashy new stuff. Lotsa love

I cover the pot with a lid. That steam it creates keeps the sugar from crystalizing. A glass lid is better so I can watch it. Or just use a timer.

Pretty much good advice for anything in the kitchen that falls! Please don’t try to catch falling knives! Just step back and let it fall.

I do the same with knives all the time these days after taking the tip of a paring knife to my shoeless foot years ago... luckily, it wasn't something heavier, or I would have needed stitches.

For those of you that don't know, boiled sugar can reach up to 350°F
Not only that, but the second it hits your skin, it STICKS. Sugar is STICKY.
Thats gonna hurt for a LONG time
