CS-Ep.81 – 1-Minute Video! EGG SALAD SANDWICH – You know how avocado toast was all the rage? We’re piggybacking off of that idea by offering up a favourite sandwich, re-imagined so it stays true to the intention.
Toast up some healthy bread, cook up your favourite egg and toss together a simple salad. Time to start your day off with this easy, delicious breakfast option!
Here's what you’ll need to make our EGG SALAD SANDWICH:
2 pieces of gluten-free bread, toasted
butter for toast, optional
1 egg, cooked to your liking
2 C of microgreens
1 avocado, thinly sliced
a handful of crumbled feta cheese
squeeze of lemon juice
drizzle of extra virgin olive oil
salt and pepper to taste
To prepare:
Place two pieces of gluten-free bread in your toaster and toast bread to your desired doneness. Butter the bread if you wish and set aside.
Cook one egg to your liking – poached, boiled, scrambled or fried, you decide.
Place microgreens into a small bowl add avocado and a handful of crumbled feta cheese. Add lemon juice and oil and toss lightly. Season with salt and pepper to taste.
To Serve: Place one piece of toast onto your plate. Add the cooked egg followed by a generous helping of the tossed salad. Place the second piece of toast on top and press down lightly. Serve, eat, enjoy!
