Ingredients for 12 muffins
• 2 large eggs
• 150 g (3/4 cup) sugar
• 100 ml (1/2 cup) vegetable oil
• 240 ml (1 cup) milk
• Pinch of salt
• 40 g (4 tbsp) cocoa powder
• 100 g (3/4 cup) all-purpose flour
• 1 tsp (5g) baking powder
• 30 g (1/3 cup) coconut flakes
• 50 g chocolate chips
chocolate frosting:
• 100 ml (1/3 cup+ 1 ¼ tbsp) whipped cream
• 100 g dark chocolate chopped
• coconut for decoration
Instructions
1. Preheat oven to 170c degrees (375f degrees).
2. In a large bowl, whisk eggs, sugar, oil, soy milk, salt until mixture is smooth.
3. Sift in cocoa, flour and baking powder, add the coconut and continue to mix until incorporated.
4. Transfer the mixture into the muffin pan.
5. Sprinkle chocolate chips on top of each muffin.
6. Bake the muffins for 20 minutes. Cool completely at room temperature.
7. Chocolate frosting: in a small bowl put whipped cream and dark chocolate and melt in the microwave. Stir until all the chocolate melts and mixture is shiny.
8. Pour 1-2 teaspoons of frosting over each muffin
9. Garnish with coconut flakes and serve.
