Not sure if you are aware of this but the chances of getting a double yolk egg is 1 in a billion. (1 in every 1, 000 eggs) and the fact that you got two in a row is amazing. I’m surprised more people didn’t recognize how rare this is

Ingredients for 2 servings:

2 tablespoons olive oil
1 small yellow onion, finely chopped
2 garlic cloves, minced
2 tablespoons tomato paste
1 red bell pepper, finely chopped
1(14-ounce) can diced tomatoes/ 2 cups fresh peeled tomatoes
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon red chili flakes
¼ teaspoon chili powder
2 teaspoons garlic powder
1 tablespoon fish sauce/ water
Salt and pepper, to taste
4 large eggs
¼ cup crumbled feta cheese
Fresh parsley, chopped, for garnish
Crusty bread, for serving

Preparation:
1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic. Cook until softened, about 5-7 minutes.

2. Add in the diced red peppers, tomato paste, cumin, chili powder, paprika, red pepper flakes, garlic powder, salt and pepper. Cook for another minute until fragrant.

3. Pour in the diced tomatoes and fish sauce. Let the mixture simmer, covered, for about 10-15 minutes, until it thickens slightly.

4. Make small wells in the sauce with the back of a spoon, and crack an egg into each well. Cover the skillet with a lid and cook until the eggs are just set, about 5-8 minutes.

5. Top with feta cheese and garnish with chopped parsley. Serve hot with crusty bread for dipping.

I did this with chopped bacon as my first ingredient and cooked it halfway before adding the onions and peppers. It was delicious.

Ok, def adding some fish sauce to this next time and maybe some chili oil. Such a delicious meal in itself. So gpod with rice as well as beans.

Very similar to the Italian Eggs in purgatory, originating in Naples! Different spices but both are delicious😋

Fish sauce is A-okay because worcestershire sauce has anchovies in it. So does caesar salad dressing. A-OKAY!!🙌🏽❤️

Looks nice, but I would add roasted merguez and eat this on a toast.

I could also make a lasagna out of the sauce and lasagna pasta, and add the eggs on the top at the very end.
