LET'S COOK WITH SEASON: Eggless Pineapple Pound Cake 🍍
Ingredients-
Pineapple (1/2 of a fruit)
Sugar - 7tbsps
Butter (room temperature)- 50g
Milk - 1cup
Vinegar-1tbsp
Vanila or butterscotch essence- 1tbsp
All purpose flour-2 cups
Baking soda -3/4 TSP
Icing - powdered sugar and cream
Method-
Grind pineapple pieces and then heat it until it is cooked.No need to filter pineapple juice.
In a bowl add milk and vinegar. Leave it for it to curdle. Then add sugar, butter and vanilla/butterscotch essence. Preferably butterscotch essence because it enhances the flavor of pineapple.
Then combine it well.
Add sifted flour and baking soda. Fold in the wet and dry ingredients just until they are almost combined.
Preheat the oven at 180°c.
Pour the batter into a baking pan lined with parchment paper. Bake for 30-35 min until it is cooked .
Apply sugar syrup. And Once cooled down completely top with icing .
Serve with love ♥️
