I love the positivity, but “open-ended learning journeys” don’t pay next weeks bills or assist with businesses that are being shut down.

It's a lot of work to tailor your cover letter. Most companies dont even look at your cover letter. I'd suggest focus on your CV, and write a simple email in your application.
