Pumpkin Blended Overnight Oats | Eating Bird Food

Everyone has loved my blended overnight oat recipes so here’s a pumpkin version for you! They’re creamy, loaded with pumpkin flavor and have a good amount of protein so they’ll keep you full for hours. 💯

Here’s how to make them:
½ cup rolled oats
¼ cup canned pumpkin
½ tsp pumpkin pie spice
½ Tbsp chia seeds
1 Tbsp maple syrup
1 scoop vanilla protein powder
¾ cup milk (I used almond milk)
Toppings: I did pepitas, granola and a drizzle of nut butter

Blend all of the ingredients together, except for the toppings. Pour into a jar or bowl and place in the fridge overnight (or at least a couple hours) to set. Bring the blended pumpkin overnight oats out of the fridge, add toppings and enjoy!
