nah... best use cast iron always... and you want the pan flaming hot with smoke coming off the butter... and you don't need so much butter just a good layer to coat the pan it will still flavour the eggs. Put the pepper into the hot butter and it will be more fragrant... then basically it will all happen in about 30 seconds to 1 minute... so just the same process but work quickly... the eggs will be beautiful and light. The most important things FRESH EGGS.. straight from the farm... shop eggs are a waste of time really.. at least where I live.. always too old.

Good job Stein isn’t known for his scrambled eggs. Just for all the sacking of his staff and his “chain” of perfectly average and over hyped restaurants.

Justice would see this chef eaten by a great white shark 🦈. One for the fish!

Good eggs Mr Stein! Gee you are looking a bit old buddy? Recently watched you 'fantastic' Spain series and then also the Far East episodes 1 - 3 again and seeing you here is concerning. You look 20 years or more older than you did in those shows and for the dickheads out there, we are not interested in Ricks business or in his 'staff' but just in his 'great' shows impeccably presented.
