I am in Thailand khon kaen, could not find the garam masala so went with cumin, coriander & tumeric, bit of tomatoe puree and added small amount of coconut milk at the end, was REALLY good ! fresh spices helped, oh i added coriander also ! so improvised but really great

Blessed are the Mothers! There is a reason why the French refer to Mother sauces, Linguists refer to Mother tongues, and Chefs include the words comfort food with the word Mother. New found respect for the Stein Way! Cheers!

I'd never seen this cook before. I love him! He's so good!

garam masala is already roasted so it shouldn't be cooked through otherwise it will turn bitter. It should be added in at the final stages of cooking.

Rick doesn't say how much garam masala and the link to the website doesn't work. I was going to make it tonight and I'm wondering if I used 2 teaspoons of garam masala it would be enough? I expect we'll see

It’s not British at all. It came from the Indians. We’ve been doing it for many years in South Africa with fruit and banana especially in the south cape since before the Brits showed up

I'm a huge Stein fan but this is an abomination on every level. Waitrose sell out included. Disgusting
