I do this. But instead of bread crumbs I use panko mixed with Parmesan cheese from bottle. So good!

You can put a tuber-ware lid on top and press down while slicing….leas chance of cutting your hand and you tend to get more uniformity.

I get about 5 or 6. I love them thin too. But I don’t cook in olive oil because it tends to smoke. I’ve been using an avocado oil.

You should try seasoning the chicken with salt and pepper and garlic powder. Then hitting it in some flour.. then after that do the egg and the panko. You’ll never do it any other way after that. Also if you’re making the chicken for a pasta. Just do the salt, pepper and garlic, then dredge it in flower and put on a pan with a tbsp of olive oil. That chicken will adhere to any sauce you make after and be perfect! ;)

So that’s what i did wrong. I tried cooking a whole breaded boneless chicken breast and although it did cook all the way through. The breaded part got burnt

Definitely add a little Regiano to the breading, flour lightly before egg wash, and add a little avacado oil to the evoo to raise the smoke point. 🇨🇦 🍅

It’s thin because of pounding it, not because of slicing

If you make your chicken cutlets razor thin, you have dry chicken. YOU are doing it wrong.
