2 cans of chickpeas (drained and rinsed)
1 onion, chopped
Cinnamon 2 inches, cardamom 4-5, cloves 5-6
1 teaspoon of cumin seeds
2 teaspoons of chilli flakes
1 teaspoon of grated garlic
1 teaspoon of grated ginger
1 can of diced tomatoes
1 teaspoon of paprika
1/2 teaspoon of cayenne
1 teaspoon of ground turmeric
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1 teaspoon of garam masala
A handful of dried fenugreek leaves
Salt, to taste
1 can of coconut milk
Fresh cilantro, for garnish
Instructions:
Heat some oil in a large saucepan over medium heat.
Add Cinnamon, cardamom, cloves, cumin seeds, chilli flakes, and chopped onion, grated ginger garlic paste. Cook until softened and translucent, about 5 minutes.
Add the minced garlic and grated ginger and cook for another minute.
Stir in a can of tomato, turmeric, cumin, coriander, and garam masala, and cook for a minute or two until fragrant.
Add the drained chickpeas and the water to the saucepan and bring to a boil.
Stir in the coconut milk and let the curry simmer for 15 minutes.
Add garam masala and crushed dried fenugreek leaves.
Season with salt, to taste.
Serve the chickpea curry with rice or bread and garnish with fresh cilantro.
