This take actually makes sense because based on how they built Thor up in the first game it reflects on his slothful and hedonistic nature to party hard and not give two shits about anyone else but he also has the strength and the malice to back it up

Besides the red hair, Thor is also described as having fierce eyes and an enormous appetite (both from the Marriage of Thor story)... so yeah, it makes sense to me that a guy who can eat for a whole family's worth on a regular basis would be a sizeable chap around the midsection.

There are myths that mention Thor's insane appetite that even other gods are surprised at, and he is also commonly accepted to be the physically strongest of all the gods. Strongmen are known for eating loads to build muscle with, and for being... Well.... Strong, the strongest among people in fact. It makes perfect sense for him to be built the way he is in GoW.

Thor fits the faded look of a forgotten kingdom, far removed from it's better days. It's only bad if this Thor is a pale reflection of a prime version. The Greek panthion were a vision of pristine God's in all their splendor; it fit the Kratos of that era.

The red hair and beard as it is in norse myth proper is a plus for me. The gut... well, Thor is said to have a prodigious appetite. He was once tricked into drinking directly from the sea and lowered the sea level as a result.
