Can you do this for 48 hours? It sounds like he says he did it yesterday but mentions 48 hours. I love this method but have always wanted to try it on a thick choice ribeye or strip for 48 hours but am afraid to ruin the steak.

This is very novice. He didn’t even put it on a rack to air the moisture underneath the steak…..very beginners
