He’s not saying that Remi was alive way back then. He’s saying that Remi grew up with Ego’s mom years after Ego grew up. But Remi would have learned a lot of his cooking skills by watching Ego’s mom cook. So Remi would cook similarly to Ego’s mom, causing Ego to have a flashback to his childhood

Disney Theory: Annie and The Rescuers are connected. When Rufus the cat is talking to Penny in The Rescuers, she says something about a little red headed girl getting adopted. The little red head girl could have been Annie. I haven’t really looked into the theory but it sounds plausible to me

This reminds me of a video the odd1sout made. He says the worst part about animations is making the backgrounds. They take so long and only are used for a few scenes. So he said animation teams will often re use old backgrounds and change a few things to save time and money and hope you don’t notice. Even using backgrounds from other movies but change a few things. And being a kids movie I don’t think they thought many would notice.

No one ever thought, that maybe the old lady is Ego's mom, but they fell apart after he took the star from Gusteau's restaurant, which looking at the show the old lady was watching, and the cooking book had to be her favourite chef? Just me? Ok

I think it's better to point out that the home seems to be in the country while the home Remy learned how to cook was also in the country owned by an old lady that could be the same age as the mother of the critic. If he learned her same recipes from watching her cook and being in the same kitchen then he would be literally making the same plate that his mother use to make.

Brad Bird (the director) said it would’ve been a great plot line but he admitted they were on a time constraint and had to reuse a lot of assets.
